The character of Chardonnays can range widely, displaying everything from crisp stone fruits like apples and pears to zingy ones like lemons and limes to ripe tropical ones like pineapple to minerality and “wet stone.” Techniques like barrel aging or malolactic fermentation can add a buttery or creamy character, and aromas like vanilla, almond paste and oak.
